Tom Aikens at Severins: Top chef to host fine dining experience at luxury ski chalet in Austria

Winter is the perfect time to cosy up in front of a crackling fire and sip on good red wine. What's even better? Combining that with a luxury foodie experience at a modern rustic chalet in the Alps, of course - cue Tom Aikens at Severins.
As the days get shorter and the nights longer, ski fanatics and winter mountain-lovers prepare to ascend up to Europe’s snowy peaks. There are few places quite so beautiful and luxurious as Severins in picturesque Lech, a nine-suite hotel with its own four-bedroom Private Residence, who this season welcomes one of the UK’s most loved chefs, Tom Aikens, for a series of intimate dinners over the half term period in collaboration with Severins talented Head Chef, Kevin Szalai.

Three high-end gourmet occasions will be taking place at Severins from 17 to 23 February 2020, including: A 'Tom Aikens' evening in the Severins Restaurant, which is open to the general public; A 'Tom Aikens and Kevin Szalai' evening in the Severins Restaurant, which is also open to the general public; and a special event for the Private Residence guests only.
Severins is renowned for defying culinary expectations in Lech, with Chef Szalai, at age just 26, creating impressive and immaculately presented dishes that champion local producers.
His signature dish is Deer & Moss, inspired by the abundant moss that grows on the mountains surrounding Severins, which he freezes for the winter season.
This season, Chef Szalai also launches Severins first vegan menu, making sure that all guests can enjoy his signature tastes, focus on local provenance and exceptional quality.

Tom Aikens is one of the most highly acclaimed and Michelin awarded chefs in the UK, who has been an inspiring force on the British gourmet scene for nearly 30 years, and is also a keen skier.
He's soon to open his new fine dining London restaurant, Muse, in December 2019. Muse will be a boutique destination restaurant with just 25 covers in the heart of Belgravia, and is the sixth restaurant in Tom’s portfolio that also includes Tom’s Kitchen in Chelsea and four others across the Middle East.
The Tom Aikens at Severins experience will see him join forces with Kevin to create surprise menus combining their distinctive techniques and styles.
Severins is an up-to-the-minute luxury mountain retreat, with rustic-luxe interiors - think exposed wooden beams and natural linens alongside sumptuous velvet armchairs open roaring fires. The bedrooms feature industrial-cool freestanding baths and amazing views over the snow-capped landscape.
